Plain boiling water produces bubbles that burst almost instantly at the surface because pure water has high surface tension that tears the bubble film apart. But once you add pasta, it releases starch molecules and dissolved proteins into the water. These act as surfactants—they coat the bubble walls, reduce surface tension, and make the bubbles more elastic and durable. Instead of popping, the bubbles stack into a thick, persistent foam.
As the pot keeps boiling, steam from below pushes more vapor into that foam layer, inflating it upward. The foam has nowhere to go but over the rim. A lid makes this worse: it traps steam, raises internal pressure, and accelerates the foam buildup until it forces its way out—which is why the boil-over often happens the moment you look away.
The wooden spoon trick actually works. Placing a wooden spoon across the top of the pot pops the foam bubbles on contact because the wood’s rough, room-temperature surface breaks the starch-stabilized film. Lowering the heat once the water returns to a boil also helps, since a gentle simmer produces less foam than a rolling boil. And using a pot that’s larger than strictly necessary—with several inches of headroom above the water line—gives the foam room to rise without spilling.
