Complaints about bland in-flight meals are common, but the fault rarely lies entirely with the airline chefs. Instead, the physical environment of an airplane cabin at high altitudes alters how we perceive flavors.
The primary factor is extreme dryness. Cabin air is heavily recycled and typically has a humidity level below twelve percent, which is drier than many deserts. This dry air dehydrates our nasal passages, making our olfactory receptors far less effective. Since smell accounts for up to eighty percent of our flavor perception, this makes food taste instantly blander.
Additionally, low atmospheric pressure inside the cabin directly reduces the sensitivity of our taste buds. Studies conducted by the Fraunhofer Institute show that our ability to detect sweet and salty flavors drops by twenty to thirty percent at cruising altitude. Interestingly, our perception of umami, the savory taste found in tomatoes and soy sauce, remains unaffected by pressure and humidity. This explains why tomato juice is incredibly popular on flights. Finally, the constant white noise of the jet engine further distracts our brain, dampening our ability to appreciate sweet and salty elements.
